Vegan Banana Cake with Peanut Butter Glaze

Am I the only one who equates Bundt cake with childhood fanciful good times?
Mom didn’t make them often, and I’m sure that was part of their mysterious cachet.
Never at birthdays, nor holidays. Those days already had their own designated cakes.
Bundt cakes were reserved for those precious times when she wanted nothing more than to please us. Lazy paper doll Sunday afternoons made complete with a good book, a giant glass of milk, and a slab of moist marble Bundt cake.

This cake was for my sweetie & it came about for two reasons.
1. We had a ton of rapidly ripening bananas laying around for some reason. And I mean, a shit ton.
2. Like Elvis, he loves him some peanut butter with his bananas.
So, of course there was only one option.

This wholesome Banana cake, like traditional quick bread, has few ingredients & comes together lickety split. It is vegan and grain & gluten free. Of course the glaze is not grain free. But it is absolutely scrumptious and can be made Paleo or even Keto by subbing out a few ingredients as noted in the recipes.
It is also ridiculously moist & dense, like a cross between banana bread & coffee cake. In fact, it tasted mighty fine with a giant mug of coffee instead of milk.
Don’t skip the glaze. Why would you?
Make this cake for someone you love and be prepared for the ensuing fanciful good times.



Vegan Banana Cake

Super moist & dense vegan Banana Cake. One part banana bread, one part coffee cake.

Ingredients
  

  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup coconut sugar any granulated sugar may be substituted
  • 1 tsp cinnamon
  • 1 cup gluten free flour mix I like King Arthur brand for gluten free baking
  • 1 tsp vanilla extract
  • 1 tbsp egg replacer use package directions for this, usually requires pre-mixing with water
  • 2.5-3 cups mashed very ripe bananas
  • 1/2 cup chopped nuts walnuts or pecans are fantastic here
  • 1/4 cup melted fat of choice coconut oil, avocado oil, butter, ghee all work great

Instructions
 

  • Preheat oven to 350 degrees
  • Whisk baking soda & powder, cinnamon, flour, and salt. Set aside.
  • Stir together melted butter, eggs, vanilla & bananas
  • Combine wet and dry ingredients. Stir just until combined.
  • Bake for 30 minutes. Check. Bake an additional few minutes if needed. Toothpick inserted in middle of cake should come out clean when done. Cool cake for 15 minutes before inverting. Cake will be heavy for its size and will be very dense and moist.
  • Serve warm or cool completely & glaze with peanut butter glaze. Recipe follows

Notes

The key to this recipe is the use of EXTREMELY ripe bananas.  The skins should be dark and bananas very soft.  This allows you to use less sugar and fat in the cake with great result.

Vegan Peanut Butter Glaze

Vegan & reduced sugar Peanut Butter Glaze. Easily adaptable to different healthy diets.

Ingredients
  

  • 3/4 cup creamy peanut butter of choice-- substitute nut butter of choice
  • 1/2 cup powdered sugar-- substitute honey for paleo or powdered erythritol for Keto
  • 1 tbsp warm water
  • dash salt

Instructions
 

  • Combine all ingredients in a bowl.
  • Beat with mixer until desired consistency is achieved. Taste. Adjust ingredients to taste.
  • Pore over cooled cake or other dessert

Notes

This should be a pourable glaze.  It isn't a frosting, which would be more suitable for cupcakes, etc...
