I’m a Salmon Patty lovah from way back.
Actually, when I was young we called them croquettes & Moms made ’em with canned mackerel. Before she added egg to the mixture I loved sneaking a teaspoon.
Her croquettes always included at least a sleeve of crushed saltine crackers, and were practically deep fried in Crisco.
They were heavy, salty-fried goodness, and were even better straight from the fridge the next day. Complete with a slice of white bread, a few dill pickles and dashes of Louisiana Hot Sauce.
The croquettes were delicious, sure. But all of their inherent healthiness was nullified by too many unnecessary additions.
In these leaner years I’ve switched it up. A lil’ almond meal or gluten-free breadcrumbs replaces all those saltines & white bread. A touch of healthy fat replaces the vat of Crisco.
I amped up the flavor even more with Jamaican Jerk Seasoning.
And lime, of course. All the citrus.
The result has become a reliable recipe in my kitchen, especially on busy evenings when I don’t want to spend much time cooking.
Few ingredients. Few dollars spent.
Healthful yet also appealing to non-fish eaters. My guy can’t typically be in the room as I eat canned fish in any form. Even the smell is too much.
And he LOVES these patties.
‘Nough said, yup.

Soooooooo goooooood. I’ve already made this about 4 or 5 times since finding about a month or so ago. Kitchen staple for sure now. My husband loves it.
Makes my day that you’ve incorporated the patties into your rotation! Thanks for the rating.
This recipe was so easy and delicious! They were all gone by the time dinner was over. Thank you!
Well, thank you! Those patties are making it into heavy rotation around my house these days as the price of fresh salmon skyrockets. Glad to hear they were well received.
